Description
This unbleached organic bread flour – a blend of organic hard red wheat – has been designed specifically for artisan bread baking and is the same wheat blend as our Artisan Bakers Craft Plus but without the malt. This product is a great choice for bakers seeking a flour with lower enzymatic activity. The lower enzymatic activity will allow the bread dough to sustain integrity over longer fermentation times (e.g. 24+ hour cold bulk fermentation or final shaped dough resting in a cooler for 14+ hours after 3-6 hour bulk fermentation at room temperature).
The 25 lb and 50 lb bags of this flour are labeled with a sticker that states that this product is ‘Wheat Flour.’ Rest assured that these bags of Artisan Bakers Craft are white, unbleached flour — not ‘whole’ wheat flour.
